6–8 scallops
1 tablespoons olive oil
2 tablespoons white balsamic vinegar (or white white)
1/4 – 1/2 cup fresh blueberries
3 – 4 sprigs of thyme
salt and pepper
Add the olive oil to a pan on high heat and let the oil heat up to the point that small bubbles form (but before the oil starts to smoke!).
Salt and pepper the scallops on all sides. Add the scallops one by one to the pan and let them sear for about 1 minute on that side.
Flip the scallops over. Add the fresh blueberries and the white balsamic vinegar.
Cook the scallops for a little less than 1 minute on high heat while the white balsamic vinegar reduces.
Garnish with fresh thyme leaves and serve right away.
