This protein packed stuffed tomato (tomates farcies) recipe uses ground up turkey meat (a leaner protein with less saturated fat and cholesterol than red meat, although less iron) mixed with sautéed leeks and onions and baked inside big red tomatoes and served with rice or lentils.

4 to 6 large tomatoes
300g ground turkey
1 shallot
1/2 tablespoon olive oil
1 leek (white part only)
1/8 teaspoon nutmeg
1/8 teaspoon paprika
