 This baked oatmeal with spices and fruit recipe is one of my all time favorite breakfasts. It’s so gentle on the stomach (it’s soaked overnight to render it easier to digest), packed with soluble and insoluble fibre to balance digestion and help flush arteries of extra cholesterol and hormones, and offers a complex carbohydrate source that gives energy for much longer. The cinnamon, honey and fruits baked into the oatmeal make this breakfast dish so flavourful and offers a high dose of fruits, minerals, and antioxidants.

Ingredients

1/2 cup oatmeal

1 cup nut milk

1 tablespoon honey

1/4 tablespoon cinnamon

1 banana or 1/2 pear

Salt (to your liking)

Recipe

Add the oatmeal and milk to an oven-safe cereal bowl along with all the other ingredients and stir. You can either chop up the banana and pear or add them to the top (with a drizzle of honey) as a garnish. Add in any other delights from raisins to chocolate chunks, Soak the oatmeal overnight in the fridge to help break down fibres and make it easier to digest.

The next day, bake the oatmeal in the oven at 350ºF/180ºC for 20-30 minutes (until a nice baked crust forms) or microwave for 2-3 minutes.

You can store the oatmeal for up to three days in the refrigerator and reheat in the microwave or oven.
