3 - 5 medium sized tomatoes, peels removed
1 cup watermelon
1 peach, plum, or pear
1/2 red onion
2 tablespoons olive oil
Juice of 1 lime
3 teaspoons balsamic vinegar
A handful of mixed herbs like cilantro, basil, watercress, mint
1/2 a small red spicy pepper, diced
2 tablespoons basil
A pinch of sea salt
Combine all the ingredients and purée in a food processor or with an immersion blender until combined, while still leaving some texture.
Serve chilled with a garnishing of basil, mint or spicy pepper.
