Serves 2 - 4
2 filets of sole (or any white fish)
10(dish) shiitake mushrooms
1 tablespoon olive oil
1 tablespoon lemon juice or white balsamic vinegar
1 tablespoon capers
1/2 tablespoon caper juice
1/2 teaspoon honey
salt and pepper
Whisk together the lemon juice, capers and caper juice, honey and salt and pepper in a small bowl.
Add the olive oil to a large sauté pan on high heat.
Gently place the sole filets in the pan along with the shiitake mushrooms and cook the fish for about 1 - 2 minutes on that side before flipping them over.
Pour the lemon, caper honey mixture over the fish and let the ingredients simmer for another 3 to 4 minutes (depending on the thickness of the filets).
Add a final garnish of salt and pepper and serve warm.
