Ingredients
2 cups of cooked quinoa
1 tablespoon olive oil
2 red onions
2 cups of kale, washed, rubbed, and chopped
¼ cup of pine of choice
1 roasted or boiled sweet potato, peeled and diced
Juice and zest of 1 lemon
1 teaspoon agave
¼ cup pomegranate seeds or cranberries
Salt and pepper
Recipe
Heat the olive oil in a large skillet over medium-high heat. Add onion and cook, stirring until caramelized. Add the kale, stirring until tender . Add salt and pepper and stir. Add sweet potatoes, and onion mixture and lemon juice, and honey to the cooked quinoa in a large bowl. Mix with a fork to combine. Garnish with chopped nuts and pomegranate seeds and serve warmed.
