I am obsessed with this cantaloupe salad. And melons in general. France has made me fall in love with these sweet decadent sun kissed fruits. And melons from the South of France do not taste like the picked-while-still-unripe American grocery store variety. I look forward all year to when these orb like juicy fruits will appear in the markets... and I can down an entire melon (albeit smaller than American ones) in a single day.
Cantaloupe Health Benefits
Beta Carotene: melons, especially the orange kind, are exploding with beta carotene ( turned into Vitamin A when digested) and which is a nutrient building block of collagen and essential to skin formation and repair. This vitamin also supports eye health, immune health, and healthy red blood cell production.
Vitamin C: 1 cup of cantaloupe contains over 100% RDV of vitamin C, which is essential to collagen production and immune function.
Folate: the natural food form of vitamin B-9 (called folic acid when in supplement form), and you might have heard how important this one is for pregnancy and fertility.
Electrolytes+hydration: specifically potassium, an essential mineral which supports muscle and heart function in addition to many other vital actions. And the high water content of the fruit helps keep you hydrated, especially for those who have trouble drinking enough water.
Fiber: the fiber content in cantaloupe helps balance the digestive system, flush the body of cholesterol and excess hormones.
3 tablespoons (45ml) balsamic vinegar
Sprigs of chives/coriander/basil (or all three!), minced
1/4 - 1/2 cup (150 - 200g) feta cheese
Cut cantaloupe into cubes and put into a bowl.
Add all the other ingredients and toss together.
